Before the Industrial Revolution, in the Basque Country, agriculture and livestock farming were the main activities, and the economy was generally based on subsistence. At the end of the 19th century, rapid industrialization brought economic development and wealth that unleashed desires accumulated over generations. Among these were, undoubtedly, the desire to enjoy the finest cuisine, which explains why, today, gastronomy occupies a prominent place in the lives of the inhabitants of these lands. At the heart of this culture lies the phenomenon of gastronomic societies. To discuss them, we spoke with Javier Tros de Ilarduya, president and founder of the Spanish Club of Haute Gastronomy. For fifteen years, he has enjoyed—along with the club's members—all kinds of exclusive events, and he speaks from the experience of being part of two gastronomic societies in San Sebastián and one in Madrid. ... . . . . . . . .
