After the Instagram poll...you all wanted us to cook rice with vegetables today. And the ingredients we'll need are: 200 grams of onion 250 grams of peeled and quartered tomatoes 200 grams of broccoli (or any other vegetables you have at home, up to a maximum of 500 grams) 300 grams of short-grain rice 800 ml of water 1 sachet of saffron (or substitute with a level tablespoon of food coloring) 2 cloves of garlic 1 teaspoon of sweet paprika 1 vegetable stock cube 60 ml of extra virgin olive oil 200 grams of frozen green beans 100 grams of red bell pepper 100 grams of green bell pepper This recipe is very easy; it took us 40 minutes and makes five servings. With all that...let's begin! Add the onion, red bell pepper, green bell pepper, garlic, and tomato to the bowl and select the first program: 10 seconds at speed 5. Once all the vegetables are chopped, add the oil and remember to scrape down the sides of the bowl with a spatula. Close the lid without the measuring cup and sauté. Cook for 10 minutes at speed 1 at 120ºC in reverse. When finished, open the lid and insert the butterfly whisk. Add the broccoli and green beans (or whatever vegetables you have on hand). Program 10 minutes at speed 1 and 120ºC, reverse. When this cycle finishes, open the lid and add the rice, paprika, and then the saffron to the bowl. Close the lid again. Program 3 minutes at speed 1 and 100ºC, reverse. Once that's done, open the lid, add the water and the vegetable stock cube, and close the lid. We programmed 15 minutes at speed 1 and 120ºC, reverse. As we always say, check the cooking time recommended by the rice manufacturer. That's the time you should use. It's very important to follow the instructions; it will determine whether you get mushy or fluffy rice. This rice recipe we're showing you is a great way to use up vegetables you have at home.
