Add the milk little by little, stirring constantly to avoid lumps. Return to the heat and let it thicken, stirring constantly. When the cream is ready, add the dark chocolate and rum flavoring. Mix well until smooth and homogeneous. Transfer to a bowl, cover with plastic wrap, and let cool. Pastry Cream Heat the milk with the lemon zest. In a small saucepan, combine the eggs, cornstarch, and sugar and stir. Add the vanilla and the hot milk little by little, stirring constantly. Return to the heat and let it thicken. Once ready, transfer the cream to a bowl, cover with plastic wrap, and let cool completely. Assemble Dip the ladyfingers in the Alchermes and arrange them on the bottom of the baking dish.
