A restaurant operated by a third-sector company in Nishiwaga Town, Iwate Prefecture, a region known for its thriving buckwheat cultivation, is reopening as a rare "all-you-can-eat 80/20 soba" restaurant. On July 10th, the townspeople were treated to a free serving of soba. The restaurant reopening on July 11th is "Rest House Yunosawa," operated by the Nishiwaga Industrial Corporation. It will be reborn as an all-you-can-eat specialty restaurant serving "80/20 soba," made with 80% buckwheat flour and 20% wheat flour. Prior to the grand opening, on the 10th, the townspeople were treated to a free serving of soba. The 80/20 soba, made with "Nijiyutaka" buckwheat flour from Nishiwaga and "Yukichikara" wheat flour from Iwate Prefecture, is said to have a well-balanced aroma, texture, and chewiness, resulting in a clean and refreshing taste. Announcer Reiko Takahashi: "The aroma is rich, and the flavor of the soba comes through clearly. It goes down smoothly, and I feel like I could eat several bowls." The set meal, which includes the town's specialty "Nishiwarabi" (a type of bracken fern) and seasonal side dishes, costs 1500 yen (tax included) per adult. From opening at 11:00 AM to closing at 3:00 PM, soba is all-you-can-eat with no time limit. Townspeople who visited on the 10th enjoyed multiple refills. Comments from townspeople included, "The noodles are firm, or rather, just right," and "It's very delicious, I want to eat five bowls." Masayuki Takahashi, Director and General Manager, Nishiwaga Industrial Corporation: "I hope this becomes a base for promoting the Nishiwaga soba brand. I hope it becomes a restaurant recognized by soba fans nationwide." "Rest House Yunosawa" will have its grand opening on July 11th at 11:00 AM.
