Ingredients: 1 whole cauliflower (around 2 ½ pounds) For the stuffing: ½ cup Italian breadcrumbs 1 tablespoon dried parsley 1 teaspoon Italian seasonings ½ teaspoon garlic powder ½ teaspoon salt and pepper 2 tablespoons olive oil 1 egg ½ cup vegetable broth 1 large kale leaf 2 ounces Muenster cheese cut into large diced pieces For the paste: 2 tablespoons of olive oil 2 tablespoons of melted butter ½ cup Italian breadcrumbs 1/3 cup parmesan cheese 1 teaspoon Italian seasonings A pinch of salt and pepper Recipe: Remove all the green leaves off the cauliflower. Trim the core as much as possible, making sure not to cut off any of the florets! Wash well. Run under water for 2 minutes. Boil the cauliflower for 6 minutes. Drain and let cool. Trim the kale leaves off the stem and boil for 2 minutes, until softened. Drain and let cool. Chop kale into small pieces. Preheat oven to 400 degrees. Place a cake pan filled with water on the bottom rack. Make your stuffing. In a bowl, mix Italian breadcrumbs, dried parsley, Italian seasonings, garlic powder, salt, and pepper. Add in olive oil, lightly scrambled egg, vegetable broth and diced kale. Place stuffing into a large Ziplock bag and make a piping bag by gathering all the ingredients towards the corner of the bag. Cut a small hole to allow the stuffing to exit when squeezed. Squeeze some of the stuffing into the little holes on the bottom side of the cauliflower. Flip it over to the other side. Insert diced cheese into spaces between the florets. Squeeze the stuffing on top of the cheese and in other areas where there is a separation between two florets. Be careful not to break off any of the florets. Work carefully, although the cauliflower will withstand a lot of stuffing! Place cauliflower upright in a cake pan. Make your paste. In a small bowl, combine melted butter, olive oil, breadcrumbs, parmesan cheese, Italian seasoning and a pinch of salt and pepper. Spread the paste on the outside of the cauliflower. Bake for 40 minutes. Allow to cool for 10 minutes before slicing.
