Whisky making is an intricate process that relies on traditional methods and skills refined over centuries. Starting with the selection of grains, usually barley, corn, rye, or wheat, the first step is malting. During this process, the grains are moistened to initiate germination, releasing enzymes that transform the starch into fermentable sugars. They are then dried in ovens to stop germination. After malting, the malted grains are ground into a kind of flour, which is mixed with hot water to create a mixture called wort. The wort is then transferred to large tanks where fermentation takes place. At this stage, yeast is added to the wort, and the mixture is left to ferment. During this process, the sugars are converted into alcohol and carbon dioxide. After a few days, the fermented liquid, known as "wash," is obtained. Then, distillation occurs. The "wash" is heated in pot stills, where the alcohol evaporates first due to its lower boiling point than water. These vapors are captured, condensed, and subjected to multiple distillations to purify the liquid, resulting in a clear and strong distillate known as "new make spirit." Finally, the new make spirit is aged in oak barrels, where maturation occurs. During this period, which can range from a few years to several decades, the whisky absorbs the flavors and compounds of the barrels, acquiring its unique taste, color, and aroma characteristics. This interaction between the liquid and the barrel is essential for the final development of the whisky.
