Stuffed Meatloaf Ingredients – meat mixture 1 kg ground beef (ground chuck or brisket twice) 1 egg ½ cup breadcrumbs or rolled oats 1 tablespoon finely chopped onion OR 1 teaspoon onion powder or granulated onion 2 cloves of crushed garlic OR 1 teaspoon garlic powder or granulated garlic 1 tablespoon dried parsley 1 teaspoon salt Black pepper to taste Filling 1 cup finely chopped kale (without thick stems) ½ red bell pepper, thinly sliced 150–200 g of cheese (mozzarella, prato or Minas padrão) in strips or thick slices Topping (choose one) 🥩 Option 1 – Homemade BBQ sauce Brush before baking and repeat in the final minutes. 🍅 Option 2 – Sweet and sour tomato sauce Mix: ½ cup tomato passata 1 tablespoon brown sugar 1 tablespoon vinegar (apple or white) ½ teaspoon paprika (smoked paprika is wonderful here) 1 pinch of salt Preparation method 1. Combine all the dough ingredients and mix only until incorporated. Avoid over-kneading to prevent hardening. 2. On parchment paper, cooking plastic or aluminum foil, shape a rectangle about 1.5 cm thick. 3. Spread the cabbage, bell pepper, and cheese, leaving the edges free. 4. Using the parchment paper, form a firm roll. Seal the ends. 5. Place with the seam facing down. 6. Cover with BBQ sauce or tomato sauce. 7. Bake in a preheated oven at 200°C (390°F) for 40–50 minutes. In the last 10 minutes, brush with more sauce to form a flavorful crust. Breaded Chicken Nuggets (Baked) Ingredients 500g raw chicken breast 1 teaspoon salt Black pepper to taste ½ cup all-purpose flour 2 eggs 1 to 1½ cups panko breadcrumbs/coarse breadcrumbs 2 tablespoons olive oil or vegetable oil Preparation: Cut the chicken into strips or small pieces and season. Separate three plates: one with wheat flour, one with beaten eggs, and another with panko or breadcrumbs (season everything with a little salt). Dip each nugget in the flour, then in the egg, and finally in the panko, pressing firmly to adhere. Place on a baking sheet lined with parchment paper, without touching each other. Use a spray to spread a thin layer of olive oil on all the nuggets before baking. Bake in a preheated oven at 220°C for 18–25 minutes, turning halfway through, until golden brown and firm. You can also make them in an air fryer! You can freeze them raw, already breaded, and bake them directly later.
