Hello everyone! Today I'm making a soft shortcrust pastry pie with a generous blueberry filling. It's a delicious treat and very easy to make. Plus, this pie is incredibly healthy thanks to the generous amount of berries. Ingredients 400 g flour 200 g butter 1 egg 100 g sugar 10 g vanilla sugar 10 g baking powder 2-3 tbsp cold water a pinch of salt Filling 500 g berries 100 g sugar (less if the berries are sweet) 2 tbsp starch Sift the flour with the baking powder, add the sugar, vanilla sugar, and a pinch of salt. Cut the soft butter into cubes and add to the flour. Rub everything into crumbs. Add the egg, if needed, and 2-3 tbsp cold water, and knead the dough. I divide it into two unequal parts. I put the smaller one in the freezer and the larger one in the top compartment of the refrigerator. Meanwhile, I prepare the berries. I wash them, sort them if necessary, and dry them. I add sugar and starch, and mix them. I spread most of the dough with my hands over the bottom of the pan (mine is 28 cm in diameter), making a rim. I put it in the refrigerator for 20 minutes. Then I transfer the filling to the bottom layer. And then I grate the smaller portion of frozen dough on top.
