( HOW TO COOK ) Perfect Jamaican Stewed Cow Skin/Foot
Cow Skin is so delicious when stewed properly. Adding the correct herbs and spices and allowing it to simmer until its tender and transformed into delicious pieces of enjoyable flavored mouthwatering goodness. One should try this great recipe. RECIPE:5 lbs. cow skin/cow foot, salt to taste, black pepper to taste,1 tsp garlic powder,1 tsp ginger powder,1 tsp chili powder,1tsp cayenne powder,1tsp cumin,1tsp dried chives,1 tbs. perfect seasoning,1tsp adobo all purpose seasoning,1tsp old bay seasoning,3 bay leaves,5 sprigs thyme,5 stalks scallion(green onion)3 stalks celery,1tbs Worcestershire sauce,1tsp soy sauce. OPTIONAL: browning, potatoes, carrots, beans etc. can be added if desired. METHOD:(1) scald cow skin for 20 minutes then drain (2) in a large pot add enough water to cover pieces, add bay leaves, pimento, crushed garlic and a little salt (3) boil cow skin/foot until tender bet 2-3 hours pour more water if necessary (4)add all other seasonings and test for desired flavor. adjust seasoning if necessary
