A Plan Isn’t a Plan Until It Changes | Scotch Egg Special 👌😊👍

Welcome back! 👌😊👍 Today didn’t start as planned. The original idea was an Easter Scotch egg special, but we hadn’t received any eggs yet, and I wasn’t even sure if they would arrive the next day. Rather than changing the concept completely, I started working on an alternative – something like a cross between a posh sausage roll and a Wellington, with duxelles, ham and eggs in the middle, served with buttery potatoes and parsley sauce. As the day progressed, good news came in – the eggs were arriving the next day. So I went back to the original idea, but by then I had already prepared elements from the other dish… and that’s how today’s special evolved. 👉 Final plate: Scotch egg with a jammy yolk Crushed buttery potatoes with cabbage, kale and onion Parsley sauce (butter, onion, flour, white wine, chicken stock, garlic & parsley) Smoked streaky bacon Layered puff pastry with duxelles and cheese, baked under pressure and finished on the griddle Jason rated it top 2 👌😊👍 I also made sure to include more of the mise en place in this one. A lot of you mentioned you enjoy seeing the thought process behind the specials, not just the service, and that’s exactly what I’m trying to show more of. This channel started with pure POV, but now it’s more about showing the real process behind the food.
