Cut them thick. Boil them completely. Let them rest in fridge for an hour. Deep fry them and they are ready. Season with salt once fried. Fish Dry Coating: 1 cup cornstarch 2 tbsp flour 1 tsp black pepper 1 tsp salt Mix them well. Wet Coating: 1-1/2 cup flour 1 tsp baking soda 1/2 tsp paprika 1/4 cayenne pepper 250 ml club soda Mix dry ingredients and add soda just before frying and make sure the batter has paint like consistency. Not too thick and not too runny. First coat the fish fillet with dry coating and then dip in the wet coating. Deep fry the coated fillets until they are golden brown. Which will take 5-7 Minutes on medium heat. Once fried, serve with chips and tartar sauce!
