Filipino Gastronomy traces back its history and influence from other cultures. It is not like any other asian cuisine since the influence is heavily rooted counting almost 400 years of Spanish colonization. The influence of Spain is major since we grow the same produce like rice, tomatoes, aromatics and just like the Spanish we utilize most parts of the animal when cooking. Hence we have delectable dishes that have been passed on from one generation to the next and that have been around for hundreds of years. The perfect example of a Spanish dish is today's recipe- Callos. A hearty tomato based stew infused with paprika, making use of ox tripe and ox feet as the protein source. Traditionally, it is cooked for hours and in low heat to tenderize the cuts of meat at its finest. Watch as I share my own take and version of the Spanish Callos.
