PINAKAMASARAP NA BALBACUA SA BUONG PILIPINAS

I came back to Agdao Public Market after 3 years to eat again the probably best Balbacua for me so far, Encars Balbacua in Davao City. Maaaring ito na ang isa sa pinakamasarap—kung hindi man ang pinakamasarap na natikman ko sa buong Pilipinas. Not to chase something new—but to see what stayed the same. In a city like Davao, everything moves fast. Buildings change. Markets get rebuilt. Streets evolve every day in the name of progress. But inside this corner of Agdao, there’s a balbacua eatery that feels untouched by time—Encar’s. It’s early morning, around 9AM, and the place is already alive. Regulars filling tables, bowls of thick balbacua being served like it has been for decades. No fancy presentation. No shortcuts. Just slow-cooked tradition—rich, heavy, honest. This isn’t just about food. It’s about memory. Routine. And a city that keeps changing… except for a few places that refuse to move. This is Davao City.
