In a baking dish, add 9 Roma tomatoes, cut in half, 1 cup of cherry tomatoes, 1/2 yellow onion, cut into small pieces, , and 8 garlic cloves. Drizzle olive oil on top and season with, dried basil, dried thyme, salt + black pepper. Bake for 40 mins Once the tomatoes, onions, and garlic have finished baking, let the dish cool, then transfer to a large blender or food processor along with 1/2 cup of fresh basil, and 1 tbsp of olive oil (optional). Blend until smooth. Now, add 2 tbsp of tomato paste and a small amount of oil to a large pot. Cook for 2 minutes.
