This Middle Eastern couscous (or fat couscous, as Kayte calls it) is a warm, fragrant dish with a great variety of flavors and textures, thanks to some dried fruit and decadently toasted pine nuts. For more recipes, stories and podcasts, head to: http://eartheats.org/ Music: Universal Production Music --- RECIPE Ingredients: 2 ¼ cup broth or stock 1 cinnamon stick 2 cardamom pods ½ tsp salt (more if your stock is not salted) Freshly ground pepper to taste ⅓ cup chopped figs (or apricots, or another dried fruit) ⅓ cup hot water or stock 4 Tbsp butter ½ cup pine nuts 1 ½ cups couscous Minced fresh parsley Directions: In a small saucepan, warm the stock with the spices. To prepare the fruit, soak the figs in the ⅓ cup water or stock Melt the 1 Tbsp of butter in a small skillet on medium heat. When it melts, add the pine nuts and cook stirring, until they brown slightly, about 5 min. Set aside. Be careful: the nuts will continue to cook in the skillet after you take them off the heat. Melt 3 Tbsp butter in a medium saucepan over medium low heat. Add the couscous, and cook, stirring, for one minute. Strain the stock and add it to the couscous. Bring to a boil, then reduce heat to the lowest setting. Cover and cook 7-10 minutes until all liquid is absorbed and the couscous is cooked. Drain the figs and stir them and the pine nuts into the couscous. Fluff with fork to remove lumps. Serve with chopped parsley. #recipe #couscous #cooking
