Cut-cut cookies tend to be harder because they contain a higher amount of flour, but this time we're using only egg yolks to create a lighter texture. If using them for icing, replace the egg yolks with whole eggs and make the batter a little thicker. [Serious Camping Meals]    / @pattisiere-camp   *********************************************** [Table of Contents] 00:00 Opening 1:05 Recipe 1:20 Plain Dough 4:55 Cacao Dough 9:28 Finishing Ingredients: Pretzel molds (makes approximately 14 pieces each) ■ Plain Dough 30g Unsalted Butter 15g Powdered Sugar 10g Egg Yolk 5g Almond Powder 60g All-Purpose Flour ■ Cocoa Dough 30g Unsalted Butter 15g Powdered Sugar 10g Egg Yolk 5g Almond Powder 54g All-Purpose Flour 6g Cocoa Powder ■ Decoration Chocolate Coating Milk/White Chocolate, as needed [Preparation] If making by hand, bring the butter to room temperature. If making using a food processor, cut the cooled unsalted butter into cubes. While the dough is chilling in the freezer, preheat the oven to 170°C. Mix the flour (and cocoa) together. [Directions] ■ Handmade 1. Beat the butter with a rubber spatula until smooth, then add the powdered sugar and fold in. The flour will flutter around, so fold in gradually, cutting it in at first. ② Add the egg yolks and mix, then add the almond flour and mix. ③ Add the sifted flour (cocoa) all at once and mix in a cutting motion. It's ready when it forms a crumbly mixture. ④ Once the dough has come together, press it against the bottom of the bowl until smooth. ■Food Processor Preparation ① Put all the ingredients except the egg yolks into a food processor and process until it resembles powdered cheese. *You don't need to sift the flour (cocoa) and powdered sugar. Use chilled, diced butter. ② Add the egg yolks and process until the dough comes together. ③ Open the dough on a Silpat and lightly knead with your hands to mix well. ↓ From here, the process is the same for both doughs. ↓ ① Use a rolling pin to roll the dough out to 4mm and let it rest in the freezer for about 15 minutes. *Placing plastic wrap on top will prevent it from getting dirty. ② Peel the dough off the Silpat and cut it out with a cutter. Lightly roll up the second dough and cut it out in the same way. *Waste will be reduced if you roll out the cake to the width of the cutter. ③Bake in an oven at 170°C for 18 minutes. Check the color once every 15 minutes to determine if it's done. Once cooked, remove the baking tray and let cool. ④Dip in melted coating chocolate and leave to harden. 【Ingredients】 Pretzel molds (about 14 pieces each) ■Plain dough 30g unsalted butter 15g icing sugar 10g egg yolk 5g almond powder 60g cake flour ■Cocoa Dough 30g unsalted butter 15g icing sugar 10g egg yolk 5g almond powder 54g cake flour 6g cacao powder ■Decoration Coating chocolate Milk & white, to taste [Preparations] ・If preparing by hand, let the butter come to room temperature. If preparing by a food processor, chill the unsalted butter and cut it into dice. ・Preheat the oven to 170°C while freezing and chilling the dough. 【How to make】 ■Preparation by hand (1)Make the butter smooth with a rubber spatula, then add the powdered sugar and mix. Mix in the powdered sugar. (2)Add the egg yolks and mix in the almond poodles. (3) Add the sifted flour (cocoa) at once and mix as you cut. (3) Add the sifted flour (or cocoa) at once and mix as if cutting. (4)When the dough comes together, press it into the bottom of the bowl to make it smooth. ■Prepare the dough in a food processor. (1)Put all the ingredients except the egg yolk into a food processor and process until the whole mixture resembles cheese powder.Use cold diced butter. (2)Add the egg yolk and turn until the dough comes together. (3) Open the dough onto a silpat and knead it lightly with your hands.   ↓ From here on, it is the same for both types of dough. (1)Roll out the dough to 4 mm with a rolling pin and let it rest in the freezer for about 15 minutes. Put plastic wrap over the dough to keep it Clean. (2) Remove the dough from the silpat and cut it out with a die. (3) Bake at 170°C for 18 minutes, checking the color of the dough after 15 minutes. After baking, remove the baking sheet and let cool.
