In true Sonoran style, Doña Rosa prepares delicious Machaca Burritos, pairing them with golden-brown Quesadillas and serving them with Taco Salsa. What is Machaca? It is a traditionally dried meat, usually seasoned beef or pork, that is rehydrated and then used in local cuisine popular in northern Mexico and the southwestern United States. It can be served in a variety of ways, such as flautas, tacos, or tightly rolled burritos, or in a dish with eggs, onions, and peppers (green chiles or poblano chiles). Machaca is almost always served with flour tortillas, which are usually large, up to 20 inches in diameter. The dish is primarily known in northern Mexico and the southern regions of the U.S. states of Arizona, California, and New Mexico. In central and southern Mexico, it is not well known among the lower socioeconomic classes. MACHACA BURRITOS Ingredients: Oil Pepper 3 Garlic Cloves 3 Tomatoes 1/2 Onion Salt Potatoes Anaheim Chiles Tomato Puree Preparation: 1. Roast the chiles and place them in a bag. 2. Peel, cut, and wash the potatoes. 3. Chop the tomato and onion. 4. Heat extra virgin olive oil. 5. Fry the potatoes. 6. Chop the onion and tomato. 7. Peel and chop the chiles. 8. Fry all the vegetables with the meat. 9. Add pepper. 10. Heat the tortillas. 11. Serve the burritos. Attention!
