【カルダモンロール】 水       90g 全卵      52g きび砂糖    20g カルダモン   1g 塩       4g 全粒粉    40g 強力粉    160g ドライイースト 2g 1水、全卵、きび砂糖、カルダモン、塩をボールに軽量し、混ぜる。 2.全粒粉、強力粉、ドライイーストを入れ生地がまとまるまで混ぜる。 3.30分暖かいところに放置。(発酵機能があるオーブンの場合、30℃で発酵させる。) 4.時間経過後、生地を折りたたんで30分放置。これを3、4回繰り返す。 5.生地が膨らむまで発酵させる。 6.発酵後、綿棒で長方形に伸ばす。 7.溶かしバター、砂糖、カルダモンパウダーを生地全体にふりかけ、三つ折りにする。 8.三つ折りにした生地をさらに長く綿棒で伸ばし、細長くカットする。 9.成形。 10.成形後、1.5倍の大きさまで発酵させる。 11.仕上げに砂糖とカルダモンパウダーをかける。 12.180℃、15分〜焼く。 【高加水パン】 水       200g 塩       4g 強力粉    200g (ゆめちから) ドライイースト 2g 1.水の一部30gをぬるま湯に変えて、イーストを溶かしておく。 2.大きめのボールに水に塩を入れて溶かす。 3.2に強力粉、1を入れて粉気がなくなるまで混ぜる。 4.30分暖かいところに放置。 5.時間経過後、生地を折りたたんで30分放置。これを3、4回繰り返す。 6.冷蔵庫に入れて一晩寝かせる。 7.翌日、冷蔵庫から出して生地を常温に戻し、 さらに発酵が足りない場合、膨らむまで発酵させる。 8.生地を出して、成形。 9.280℃に予熱しておいたオーブンに入れ、15〜20分焼く。
