Making a crumbed chicken strips Gatsby sandwich - our take on the South African icon!

Hi all This week we have a mega sandwich packed with everything and then some! We made breaded crispy chicken strips and put it in our version of a Gatsby so big it feed 4 easily! Ingredients 500g chicken breasts for the brine 500ml (2 cups) water 3 large cloves of garlic 2 tbs fine salt bay leaves 1 tsp black pepper 1 tsp dhania seeds 1 tsp brown sugar fresh thyme 3 tbs white vinegar for breading 1 cup flour (suggest you start with 1/2 cup) 2 eggs 1 cup bread crumbs salt and pepper to season flour and eggs sprinkle of paprika for sandwich 1 whole wide baguette/French loaf cut in half homemade peri-naise Serve cut into pieces with extra chips and sauce on the side!
