In today’s video, I am sharing how to make traditional Vella Appam, a soft and lacy South Indian breakfast that is loved for its fluffy center and delicate crispy edges. This authentic recipe is made using raw rice, poha, and freshly grated coconut, and it is naturally fermented overnight. The best part about this recipe is that it does not require yeast or baking soda. The natural fermentation creates a beautiful texture with small bubbles in the batter, resulting in perfect appams every time. Vella Appam pairs wonderfully with Vegetable stew, Chicken stew, Sweetened Coconut Milk or Kadala (black chana) curry and is a classic breakfast in many South Indian homes. Ingredients 2½ cups raw rice ¾ cup poha (flattened rice) ¾ cup freshly grated coconut ¾ teaspoon salt 2 teaspoons sugar Method Overview Soak raw rice and poha for 4–5 hours. Grind the soaked rice with poha and coconut to a smooth batter. Leave the batter overnight for natural fermentation. The next day, add salt and sugar and mix gently. Adjust the batter so it is slightly thinner than dosa batter. Pour the batter into a hot appam pan, swirl, cover and cook until soft and lacy. Serve hot with curry for a delicious meal.
