"Galician Larpeira" is covered in custard and soaked in a thick syrup. Keep in mind that it's addictive; everyone will want more; it's delicious. ➡️INGREDIENTS For the pre-ferment or biga 120g strong flour 90g milk (cow's/plant-based) 10g fresh baker's yeast (or 5g active dry baker's yeast) ➡️FOR THE MAIN DOUGH 110g milk (cow's/plant-based) 130g sugar Zest of one large organic lemon or the rind washed well with a small brush. 150g butter 2 large or three medium eggs 25g fresh baker's yeast (or 1 packet of active dry yeast) 450g strong flour (or preferably HIGH STRENGTH) 1 pinch of salt ➡️FOR THE FINISH Beaten egg for brushing. Sugar slightly moistened with a couple of drops of anise.
