Conquering my Fear of the Pressure Canner, Canning Green Beans, A Golden Thought of Inspiration

Getting to the point of using a pressure canner was a hurdle to jump. Hearing stories of pressure cookers exploding made a deep impression on Martha as a child. Mom always used the water bath method which worked well; however, pressure canning is quicker and safer for some food preservation. We are sure the pressure canners have been perfected since the sixties and the desire for home grown food on the shelf won out and the challenge was taken on. We found the manual is certainly our friend, studying it and making our own notes to follow which is very handy for refreshing our mind from cook to cook. It is such a satisfying feeling to hear the jars seal and to see canned goods on the shelf that you processed yourself.  We have preserved apple sauce, apple slices, green beans, bell peppers, white potatoes, sweet potatoes, chicken, chicken broth and vegetable beef soup. We look forward to doing more.  Buddy has always been a special part of our family and I wanted to include him on our videos so that's why we have him with us when we do the Golden Thought. Buddy has been brain damaged since birth and is basically non-verbal. He was also diagnosed with epilepsy at 16 years old. He was very active in his earlier years but over time that has changed. It was hard on Buddy when our parents passed away. Then later we parted with a sister-in-law and 3 of our brothers. Our brothers were only in their 60's - so young!  Our Golden Thought for this video is "I'm using my Bible for a road map; my last stop is heaven some sweet day." As I was talking about the importance of studying and following the manual this song kept coming to my mind. The Bible really is a treasure we hold in our hand and can read the written word. Study it, reading the words Jesus wrote Himself and applying it to our lives. Is living for Jesus always easy? No, but oh so worth it! Even Jesus had hard times and is a wonderful example of how to live a christian life. Dorothy read the lyrics to this song and afterwards Buddy teased with her a little.
