MY ORIGINAL BAKED CHICKEN RECIPE & CLASSIC MASHED POTATOES | Marjorie Barretto
I've been sharing a lot of chicken recipes but this original baked chicken recipe of mine has always been my family's comfort food. You'll be surprised on how easy it is which gives you time to create mashed potatoes to go with it. Enjoy! ORIGINAL BAKED CHICKEN RECIPE Ingredients: 1 whole chicken (pre-washed with salt and calamansi) Doña Elena Pomace Olive Oil 1 to 1 1/2 tbsp rock salt 2 tbsp garlic and pepper seasoning (or just pepper) 1 can of mushroom soup Procedure: 1. Pat dry the pre-washed chicken so that the dry seasoning will stick better. 2. Sprinkle rock salt and garlic and pepper seasoning on the skin and the inside of the chicken. Massage gently. 3. Pour the mushroom soup inside the chicken. To make sure that the liquid does not spill, place the chicken face up on the baking dish. 4. Drizzle Doña Elena Pomace Olive .Oil on the chicken skin. Aside from olive oil as a healthier option, this makes the chicken moist and it helps avoid the exterior of the meat to burn. 5. Bake the chicken in 350 degrees Fahrenheit for at least an hour. Make sure to monitor the progress if the chicken needs more time. 6. After the first 30 minutes, take it out from the oven and drizzle more Doña Elena Pomace Olive Oil. Put it back in the oven for another 30-45 minutes. 7. Serve and enjoy! CLASSIC MASHED POTATOES Ingredients: 2 to 2 1/2 kg potatoes, boiled and peeled 1 can of evaporated milk 1 bar of butter, melted Rock salt and pepper to taste Procedure: 1. Mash the potatoes while it's still hot. 2. While mashing, start pouring evaporated milk to soften the potatoes. Pour until the desired consistency has been achieved. 3. Sprinkle rock salt to taste. Add the melted butter for finishing touches. 4. Spread the mashed potatoes evenly in a baking dish. Brush the remaining melted butter on the top layer. 5. Bake for 15 minutes. 6. Serve and enjoy!
