Chocolate & Matcha Daifuku with Peanut Butter & Marshmallow Filling Ingredients (8 pieces) Mochi dough 135 g shiratamako 135 g sugar 200 g water Flavoring 1 tsp matcha (2 g) 1 tsp cocoa (2.5 g) Filling 6 marshmallows (25–30 g) 40 g peanut butter Dusting Cornstarch or potato starch (2–3 tbsp / 16–24 g) Instructions 1. Divide peanut butter into 2 portions (20 g each), roll into balls, and chill 10–15 minutes. 2.Mix shiratamako, sugar, and water until smooth. 3. Split into 2 bowls. Mix matcha into one, cocoa into the other. 4. Microwave 2 minutes, stir, then 1 more minute. Stir until thick, glossy, and stretchy. 5. Dust surface, place mochi, lightly dust top, divide each dough into 4 pieces (8 total). 6. Matcha: fill with marshmallows. Cocoa: fill 2 with marshmallows, 2 with peanut butter. Wrap and seal into balls.
