תבשיל תרד ועשבי תיבול מהמטבח הערבי
המצרכים הנדרשים: ירקות: 2 כפות שמן זית, בצל אחד קצוץ, 2 שיני שום קצוצות ו-400–500 גרם עלי תרד טריים (שטופים וללא הגבעולים) . עשבי תיבול: כחצי כף פטרוזיליה קצוצה וכחצי כף כוסברה קצוצה . תיבול: חצי כפית פפריקה מתוקה, חצי כפית כמון (או תבלין אחר שאוהבים), מיץ מחצי לימון, חצי כפית מלח ומעט פלפל שחור . שלבי ההכנה: טיגון הבסיס: מחממים את שמן הזית בתבנית גדולה או בסיר רחב . מוסיפים את הבצל הקצוץ ומטגנים אותו עד להזהבה וריכוך . הוספת שום ותבלינים: מוסיפים את השום הקצוץ ומערבבים כחצי דקה נוספת (נזהרים שלא יישרף) . מוסיפים פנימה את הפפריקה המתוקה והכמון ומערבבים . בישול התרד: מוסיפים את עלי התרד לסיר . בתחילה הכמות תיראה גדולה מאוד, אך יש לתת להם להצטמצם במשך מספר דקות תוך כדי ערבוב . צמצום נוזלים: מוסיפים את מיץ הלימון, המלח והפלפל השחור . מבשלים במשך כ-10 עד 12 דקות נוספות עד שהנוזלים מצטמצמים משמעותית . סיום עם עשבי תיבול: ממש לפני הסוף, מוסיפים את הפטרוזיליה והכוסברה הקצוצות . מערבבים יחד כדקה אחת בלבד ומסירים מהאש כדי לשמור על טעמם הרענן . טיפ חשוב: הכמות הגדולה של התרד הטרי מצטמצמת משמעותית במהלך הבישול, לכן כדאי לקחת זאת בחשבון כשמתכננים את כמות המנות . השילוב בין רכות התרד לחמיצות הלימון והשום יוצר טעם נפלא
