SPRING SALAD (Serves 2): Base: 2 large potatoes (cubed, steamed) 5 medium radishes 1 handful of baby spinach leaves 6 slices of Jil Yule log (Jay & Joy) Black olives Walnuts Dressing: 3 tbsp olive oil 1 tsp Dijon mustard 1 tsp sherry vinegar 1 tbsp Malted Yeast Salt & Pepper BAKED PORRIDGE: 30g Oat Flakes 1/2 Small Banana 3 tbsp Plant Milk (Soy Vanilla for me) 1 tbsp Peanut Butter 1 tbsp Maple or Agave Syrup 1/2 tsp Baking Powder 1/2 tsp Vanilla Extract Chocolate Chips or Dried Fruit 👉🏼Bake for 20 to 22 minutes at 180°C BLACK BEANS (Serves 6-8): 350g Dried Black or Red Beans 2L Water 1/2 Onion or 1 tbsp Dried Onion 1 Garlic Clove 1 Bay Leaf Salt 👉🏼Soak the beans overnight in a large volume of water. Cook in a pressure cooker for 45 minutes over low heat after boiling, or in a saucepan until tender. This option can take up to 2.5 hours.
