You can make this flavorful, healthy, Vegan salad last minute for your friends and family and it is filled with vitamins and is rich in iron (from the beets). The delicious, simple, homemade Balsamic Vinaigrette dressing can be made ahead of time and used on any green salad. It is best served fresh. 👇 SUBSCRIBE TO MY YOUTUBE CHANNEL 👇    / @ellastastyworld   ⏱️TIMESTAMPS⏱️ 0:00 Intro 0:21 Ingredients 1:21 Homemade Balsamic Vinaigrette Dressing 2:35 Beet Salad with Arugula ⬇️ RECIPE ⬇️ ~ Balsamic Vinaigrette Dressing ~ ⅓ cup extra virgin olive oil 2 tbsp balsamic vinegar 1 tbsp lemon juice 1 tsp Dijon mustard 1 tsp maple syrup 1 small garlic clove (optional) ¼ tsp basil ¼ tsp oregano Pink Himalayan sea salt (to taste) Black pepper (to taste) Add everything to a mason jar and shake 30 seconds to emulsify, until well combined. ~ Beet Salad Recipe with Arugula ~ 5 oz organic arugula 1 lb cooked organic beets (cut into thin wedges) ⅓ cup homemade balsamic vinaigrette 1 mandarin (cut into bite-size pieces, optional) ¼ cup pistachios ¼ cup walnuts ¼ cup pecans ¼ cup pumpkin seeds (optional) Pink Himalayan sea salt (to taste) Toss arugula with a little bit of balsamic vinaigrette. Add beets, oranges on top. Scatter nuts and seeds. Drizzle with more balsamic vinaigrette before serving.
