Nicholas Alston, 27, earns $51,000 a year. He splits his time between Canton, Michigan, where he is based as a flight attendant, and Columbus, Ohio, where he opened a restaurant during the pandemic. Alston always dreamed of opening a food business, and by mid-2020 he had enough saved from his full-time job to launch his ghost kitchen, Clutch Handheld Breakfast. In August 2021, Alston temporarily closed his restaurant to increase his flying hours and save money for the next phase of his business.
