#22 Make Wheat Buns Filled With Chicken Breast, Corn & Mushrooms / Slow Life With Mimi Daisy

I hope you always find joy in the smallest, simplest things around you 🥰 This weekend, we’re back at my in-laws’ home. I got up early this morning to pick a few greens from the garden, some for lunch and a little to take back with us to Saigon. The early summer air is warm, just a little muggy, but the sky is always clear and golden. Mum proudly showed me her cucumber vines — they're flowering beautifully and already bearing a few tiny fruits. She asked me to pick some gourds growing up on the trellis, but they were too high up for me to reach. The other day, my husband mentioned he missed my homemade buns, so today I made a fresh batch — whole wheat buns filled with chicken breast, corn, and mushrooms. He said he prefers whole wheat dough because it has a naturally sweet and nutty flavour. I brought the ingredients out to our favourite corner of the garden beneath the shady acerola tree — green, breezy, and filled with birdsong. It’s lovely here, hehe. On weekends, we often have little nieces and nephews come around to play. The garden fills with their laughter as they play hide-and-seek and ask the funniest questions: One of them asked their dad, “Daddy, what kind of fish is that big one?” “It’s a Giant Gourami,” he replied. “If it’s a statue, how can it swim?” “No, sweetheart, that’s just its name — like how your name is Sóc!” Oh, the sweet innocence in those baby voices — how could anyone not adore them? Hahaha. Once I had all the ingredients ready, I stir-fried the filling with a little seasoning — some broth powder, pepper, and a splash of fish sauce for that signature aroma. A bit of chilli sauce at the end for just the right kick. A quick taste test — not bad at all! Hehe The dough has risen beautifully, all soft and puffy now. Time to start shaping the buns. Have you ever thought about how important it is to be on the same wavelength? I’m someone who’s naturally shy, not fond of pretending to be cheerful or making small talk with people who clearly don’t like me — or with whom I sensed a disconnect from the very start. I used to think that was a flaw, so I kept pushing myself to ignore it — trying again and again to be more… extroverted. To have more friends. To avoid being seen as strange — always sitting quietly in a corner. I tried to mimic others, to please people, just so they’d include me — so I wouldn’t be left behind. But those choices led me to the wrong friendships, the wrong mentors, even the wrong job that didn’t suit who I truly was. After a few hard lessons, I began to reflect — maybe the issue wasn’t with me. So I slowly stepped away from relationships where I felt out of place, where I was labelled boring for sharing the quiet little stories of my life. I stopped trying to please colleagues just to be accepted. I simply realised — I didn’t belong there. Then, one day, I met my husband. He made me understand just how important that shared frequency really is. He made me feel proud to be exactly who I am. Someone I can talk endlessly with about life, who truly values my interests. And even in our quietest moments, there’s no worry or awkwardness — just calm. It’s been nearly six years now. They say rice tastes best when shared with your soulmate. And I believe — life is truly happiest when spent with someone who understands you. The buns are steamed and ready — would you like to try one with me?
