INGREDIENTS 560 g (1¼ lb) boneless, skinless chicken thighs 200 g (1 cup / 7 oz) uncooked rice 400 ml (1⅔ cups) water 25 ml (1½ Tbsp) vegetable oil — for the chicken 15 ml (1 Tbsp) vegetable oil — for the vegetables 20 g (1½ Tbsp) butter 1 onion 1 zucchini ½ bell pepper 2 garlic cloves 2 eggs 15 ml (1 Tbsp) soy sauce Sesame seeds, to finish Salt & ground black pepper, to taste INSTRUCTIONS Cook the rice: Add the rice, water, and a pinch of salt to a pot. Bring to a boil, then cover and simmer for 15 minutes. Set aside. Cook the chicken: Heat 1½ Tbsp oil in a pan. Add the chicken thighs, season with a few pinches of salt and black pepper, and cook until done. Set aside and chop into bite-size pieces. Sauté the veggies: In the same pan, heat 1 Tbsp oil and the butter. Add the chopped onion, garlic, zucchini, and bell pepper. Sauté for about 4 minutes. Add the eggs: Pour in the beaten eggs and mix well until scrambled through the vegetables. Bring it together: Add the cooked rice and chicken, a pinch of black pepper, and 1 Tbsp soy sauce. Stir well and cook for a few more minutes. Finish: Sprinkle with sesame seeds and serve.
