[Rekimeshi], or "Historical Recreation Meals," recreates historical food cultures in the modern age. Today, we've completely recreated "Tempura Soba," a dish eaten during the Edo period, based on historical documents. From Edo-style tempura soba, popular among Edo townspeople and craftsmen, to Kansai-style tempura soba where the tempura was served on a separate plate, and even vegetarian tempura soba served in temple districts and temple areas, without using meat or fish. Although all are called "tempura soba," the taste of the broth and the way it was eaten differed greatly.
