This simple salad with tortellini and lots of crunchy vegetables is quick to prepare and looks appetizing too. This summer salad is also a delicious and healthy side dish for a barbecue or for your lunch or dinner. 500g tortellini Cook the tortellini according to the package instructions until al dente. 1 red pepper 1 yellow pepper 350g tomatoes 1 cucumber 300 g cream cheese ½ bunch of parsley Salt and pepper to taste Preparation of tortellini salad 1. Cook the tortellini in salted water or vegetable broth until al dente and allow to cool. 2. In the meantime, cut the peppers, cucumber and tomatoes into small cubes. 3. Mix everything together with cream cheese, half a teaspoon of salt, a little pepper and possibly 1 tablespoon of balsamic vinegar. Bon appetit!
