This tutorial will show you the simple way to achieve fresh, crispy, flaky and delicious fried catfish at home any time you want. Amount Ingredients 1# Catfish Filets 1 Cup Buttermilk 1 3/4 Cups Yellow Cornmeal 1/4 Cup Flour-AP 1/2 teaspoon Onion Powder 1/2 teaspoon Garlic Powder 1/2 teaspoon Black Pepper 1 teaspoons Table Salt As needed Oil Procedure Clean Excess coloring from Catfish Filets, pat dry with paper towel. Place into container, add Buttermilk, and coat well. Refrigerate for at least 15 minutes. Meanwhile heat oil to 350°F. Mix all remaining dry ingredients in large bowl and set aside. Remove Catfish from Buttermilk, shaking off excess. Place 1 at a time into Dry Mixture. Coat well, covering and pressing gently but well, making the Mixture stick to all surfaces. Shake excess Dry mixture off and gently place into HOT oil. Let cook for at least 2 minutes without touching the fish. (This is to let the breading firm before being agitated.) Flip and cook for an additional 3 or so minutes, or until crisp golden brown exterior forms. Fish is done when it is fully flaky, or temps at 145° when checked with a thermometer.
