Ingredients (makes about 60 small cookies): 2 cups (385g) brown sugar 1 cup (250g) lard (Tenderflakes) 4 eggs 2 cups (500ml) molasses 2 cups (500ml) milk 6 cups (840g) all-purpose flour (adjust as needed) 2 tbsp baking powder 2 tsp baking soda Preparation: 1- Preheat oven to 375°F (190°C), rack in the center. 2- Mix the lard and brown sugar (with a spoon or an electric mixer). 3- Add the eggs one at a time, mixing well after each addition. 4- Add the remaining ingredients and mix. Add a little more flour if the batter seems too runny. 5. Line a baking sheet with parchment paper, then using spoons, drop 6 to 8 balls of dough onto the sheet. Each ball should be about 3 tablespoons in diameter. Space them out as they will spread. 6. Bake for 5 to 7 minutes, or until the center has puffed up. Remove from the oven and let cool slightly.
