In the city of Bangkok there are whole food stands dedicated to making this lovely noodle dish. You never forget the first time you taste those sweet, tangy noodles stir fried with eggs, shrimp, tofu and bean sprouts. Although the flavors seem very complicated, once you get all the ingredients together, it’s quite easy to make. Today we give this classic dish our own twist by adding a peppery watercress and instead of chopped peanuts, garnishing it with sliced almonds. We’ve always been fans of the quirky Trixie Mattel, the fabulous queen from Wisconsin, who thanks to her sharp sense of humor and distinctive doll like make-up, won the hearts of fans of RuPaul’s Drag Race, making her a standout from Season 7. It’s funny how much people have an opinion about drag queens and make-up, never actually done it themselves. Marc and I live for Trixie’s extreme make-up style, which after a couple of drinks at a gay bar makes you think you’re talking to a living, giant blow up doll.
