This is a traditional dum-style biryani with deep flavour, aroma, and restaurant-quality taste 😍🍚 Perfect for family meals, weekends, or special occasions — this recipe guarantees an authentic homemade biryani experience! 🧂 Ingredients Used 🍗 Chicken Marinade (for 1 kg chicken) 1 kg Chicken 1 tbsp Ginger Garlic Paste 1 tbsp Ghee 1 tbsp Salt (adjust as needed) 1 tsp Cumin Powder (Jeera Powder) 1 tsp Coriander Powder 1–2 tsp Red Chilli Powder 1 tbsp Biryani Masala 1 Big Lemon (juice) 2 tbsp Curd (Green Yogurt) Fresh Mint Leaves (Pudina) Fresh Coriander Leaves Curry Leaves 🍚 Rice Preparation 500g Basmati Rice Water (about 70% of normal boiling ratio adjustment for parboiling) ½ tbsp Ginger Garlic Paste ½ tbsp Ghee Biryani Masala Mint, Coriander, Curry Leaves --- 🌿 Whole Spices Cloves Cinnamon Stick Bay Leaf Star Anise Black Stone Flower (Kalpasi / Rathi Poovu) Marathi Mogga Shah Jeera --- 🧅 Other Ingredients 1 Large Onion (sliced) 1 Tomato (chopped) 5 Green Chillies Mint Leaves Coriander Leaves Curry Leaves Ghee --- 👨‍🍳 Step-by-Step Cooking Process --- 🥣 Step 1: Marinating the Chicken First, take 1 kg chicken and add: Ginger garlic paste Ghee Salt Cumin powder Coriander powder Red chilli powder Biryani masala Lemon juice Greek curd (yogurt) Mint, coriander, and curry leaves Now mix everything well and *massage the chicken for 5 minutes* so all the spices absorb properly. After mixing, cover and refrigerate for *2 hours* for best flavour. --- 🧅 Step 2: Preparing the Base Masala Heat a large pan or kadai and add **1 tbsp ghee**. Now add whole spices: Cloves Cinnamon Bay leaf Star anise Shah jeera Marathi mogga Black stone flower Fry for about *30 seconds* until aroma releases. Then add: Sliced onions Green chillies Curry leaves Mint leaves Coriander leaves Sauté until onions turn **70% brown and golden**. --- 🍗 Step 3: Cooking the Chicken Masala Once onions are ready, add the *marinated chicken* directly into the pan. Mix well and adjust salt if needed. Cook the chicken on medium flame until it is about **80% cooked**. Let all the masala blend well and form a thick gravy. Now add the tomatoes and saute them until its mixed with gravy 🍚 Step 4: Preparing the Rice In an electric rice cooker or pot, boil basmati rice. Instead of full water ratio, reduce water slightly (about **30% less than normal**) to keep rice slightly undercooked (for dum process). While cooking rice, add: Mint leaves Coriander leaves Curry leaves Ginger garlic paste ½ tbsp ghee A little biryani masala Cook rice until it is about *90% done* (not fully soft). --- 🍲 Step 5: Layering the Biryani Now start layering: First add a layer of cooked chicken masala Then add a layer of rice Again add chicken Then rice Repeat layering until everything is used. --- 🔥 Step 6: Dum Cooking (Final Step) Cover the pot tightly and cook on **low flame for 15–20 minutes**. This dum process allows all flavours to blend perfectly into the rice and chicken. --- 🍛 Final Result After 20 minutes, your **South Indian Chicken Biryani is ready**!
