The “GOLDENEST” Golden Egg Shrimp Fried Rice | Wally Cooks Everything

After trying this Chinese chow fan recipe out you’ll never make fried rice the same way again. Golden fried rice is made by smothering your rice with lots of egg yolks. You can't go wrong when you cover anything with egg yolks. And oh yeah, there's shrimp in it. ---------------------------------------- Ingredients: Makes 2 to 3 servings 400g (14.5oz) Thai Jasmine Rice (overnight and refrigerated is recommended) 150g (5.5oz) Shrimp peeled and deveined 3 Large Eggs 1 Cup Mixed Vegetables 2 Stalks Spring Onions Chopped 1 Teaspoon Salt 1/4 Teaspoon Ground White Pepper 1/2 Teaspoon Pure Sesame Oil Separate the eggs and add all the yolks to the rice. Set the whites aside we will be cooking those later. Add salt, ground white pepper and sesame oil to rice and egg yolks. Then mix until most of the rice is covered with egg yolks and set aside. On medium heat Cook the egg whites with a couple of tablespoons of oil until light and fluffy and set aside. On a clean pan on low medium heat add a tablespoon of oil and add shrimp, season with a dash of salt. Cook the shrimps until about 70% done. You can tell by the color, the shrimp should look slightly orange and white. Then remove and add to egg whites. On the same pan (no need to clean this time) heat on high and add about 3 tablespoons oil when the pan starts to smoke. Drop in the egg covered rice. Keep stirring and mixing, you don’t want to burn the rice and make it dark. When you see the rice jumping around add the vegetables and cook for 30 seconds. Then add egg whites and shrimp and cook for another 30 seconds. Remember to keep moving the ingredients around. Finally switch off heat and add chopped spring onions. There will be enough residual heat to cook out the rawness of spring onions while not overcooking the shrimp.
