Hungarian Pasta with Potato (Krumplistészta) by Kitchen Paprikash

Pasta with potato has always been the poor-man's food, but we Hungarians like to cook this dish often. It's not elegant, but easy to make and of course it's cheap. (I certainly don't mind :)) Before the pasta is added and the potato is mashed, it is actually a separate dish known as Potato Paprikash ("Paprikáskrumpli). You can make like this, or add some chopped sausage/Kiebalska into it while it's cooking. Here is the recipe of the Krumplistészta: Ingredients: (serves 4-5) 1 lb red skin potatoes 1 lb square noodles 1 large onion 1 green pepper 1 tomato 1 clove garlic 2-3 tbsp paprika (Hungarian if possible) 2 red chillies some Strong Steve (Eros Pista) hot paprika paste olive oil, salt, black pepper 1. Finely chop the onion and saute in the heated olive oil until soft and golden 2. Peel and chop the potatoes (into 1 inch cubes) 3. When the onion is tender, pull of the heat and stir in 2-3 tbsp of paprika. 4. Put the potatoes into the onion mixture, and stir well 5. Add the halved and de-seeded green pepper, tomato, garlic and chilies into it 6. Season with salt and lots of freshly ground black pepper 7. Pour enough water to cover the potatoes 8. Cover the pot and cook on low-medium heat until the potatoes are tender 9. Meanwhile cook the pasta as directed (do not overcook!) 10. When the potato mixture is ready, add some hot Hungarian paprika paste (Eros Pista = Strong Steve) if you like it hot 11. Take it off the heat and mash the potatoes with a fork but leave some chunks 12. Pour the pasta into the potato mixture and stir well 13. Make the final seasoning with salt and black pepper 14.
