Bologna’s nickname, "La Grassa" (The Fat), reflects its reputation for culinary excellence, including dishes like tagliatelle al ragù and tortellini. The city is also known for its red rooftops, giving it the nickname "La Rossa" (The Red). Most pasta lovers know Bologna for the Bolognese sauce, or "ragù alla bolognese," which originates from Bologna. In Bologna however, it is not served with spaghetti but typically paired with fresh egg-based tagliatelle pasta, known as tagliatelle al ragù. A 1972 recipe deposited with the Bologna Chamber of Commerce specifies the ingredients and preparation for the authentic version. Another interesting fact: Bologna was the first Italian city to abolish slavery in 1256 with the Liber Paradisus law.
