Meringue Pie - Passion Fruit Pavlova - Anna Olson's Baking MAIN INGREDIENTS For the pavlova: 4 egg whites at room temperature 1 cup sugar 1 tablespoon cornstarch ¾ teaspoon cream of tartar 1 teaspoon vanilla extract For the assembly: 1 cup whipping cream ½ teaspoon lemon zest 1 tablespoon lemon juice 3 tablespoons sugar ½ teaspoon vanilla extract 2 passion fruits RECIPE PREPARATION Preheat the oven to 135°C. Before starting to bake, using a pie tin, draw a circle with a marker on baking paper. To start, beat the egg whites with the sugar until smooth. Then add the cream of tartar and cornstarch. Whisk lightly to combine. Finish with the vanilla and mix. Pour the entire meringue mixture into the circle you drew. Bake at 135°C for 60-90 minutes. Meanwhile, in a bowl, whip the cream with the lemon zest, lemon juice, sugar, and vanilla until stiff. Place everything on top of the pavlova. Finish with the chopped fresh passion fruit and serve.
