Preheat oven to 350F (180C) and you’ll need a 10-12 cup Bundt Pan, prepared with cooking spray or use a piece of wax paper with some butter on it. Ingredients (Using double recipe): Uses both butter and oil, makes for a flavorful and moist cake. Since it’s in the oven for an hour or longer, the oil keeps the cake from drying out. 2/3 cup unsweetened cocoa powder 4 ounces bittersweet (60%) chocolate, finely chopped 6 cups all-purpose flour 4 teaspoons baking powder 2 cups (4 sticks) salted butter, room temp 5 cups sugar ½ cup oil 10 large eggs 2 2/3 cup sugar 2 TABLESPOONS vanilla extract 2 cups buttermilk (room temp) -(see below how to make your own) Glaze ingredients: 5 cups powdered sugar (have extra on hand in case you need to thicken a bit) 6 Tablespoons salted butter, melted 6 Tablespoons buttermilk, plus more as needed 1 teaspoon vanilla extract Steps: In small saucepan, simmer ½ cup water over medium heat. Whisk cocoa powder and remove from heat. Add the chopped chocolate and allow to sit for 30 seconds before stirring until melted and well combined. Set aside. In a bowl, sift or whisk together the flour and baking powder. Beat butter and sugar. Add eggs one at a time, beating well in between. Add flour in three parts with buttermilk. Now, take half the dough and put in a separate bowl. Add to this portion the previously mixed chocolate mixture; mix well. Be sure to prepare your Bundt pan properly for chocolate dough: if you use both butter and flour to coat the bottom of the pan, your cake will come out just fine. Do not repeat my mistake in the video of just coating with butter. Chocolate is known to be very sticky and for some reason I didn’t count it as a “chocolate cake” so I coated for just a white cake…big mistake. You’ll spoon the dough in alternating vanilla and chocolate scoops. Use a large spoon as shown in video. Finally, use a knife and swirl the dough in a figure eight pattern as shown in video. Be careful not to touch sides or bottom of the pan while doing this. Cake is ready to bake! Bake at 350F for one hour 15 minutes to 1 hour 30 minutes or until knife in center comes out clean Let stand 10 minutes in pan, then invert on a wire rack and cool cake completely. Glaze: Mix confectioners sugar, melted butter, buttermilk and vanilla until a pourable consistency. Cool cake completely before adding glaze. Note: if you don't have buttermilk at home, you can make it with milk and vinegar: 1 cup milk plus 1 Tablespoon vinegar. Mix both and let stand for 10 minutes, it'll get curdly looking which is what you want! Despite my mishap, this cake is so delicious, I hope you will try it.
