In this episode of Happy Baking, I'm making one of my favorite pastries (that can be hard to find in the US): Viennoise Au Chocolat or Chocolate Vienna Bread! This soft, individually sized mini-loaf is made from an enriched yeasted dough that produces a golden brown exterior and a soft, fluffy interior crumb. This version is studded with chocolate, and it’s a truly perfect, just sweet enough pastry. Often enjoyed for breakfast or as an afternoon snack, I believe this recipe deserves a spot in your regular baking rotation! I'll show you how to mix the dough, let it rise and shape these delightful pastries. Your kitchen is going to smell like a boulangerie!
