Classic Freezer Pickles

RECIPE…. 2 T- coarse salt 1-2 medium onions thinly sliced 2 - quarts thinly sliced cucumbers Mix and let set for 2 hours Rinse an drain well, set aside In sauce pot mix and heat until clear and sugar is dissolved… 1 C- white vinegar 2 C- sugar 2 t- celery seeds 2 t- mustard seeds Allow to cool Place drained cucumber/onion into containers, pour cooled liquid over just to cover… Place lids on container, wipe down to remove sticky and allow head space for expansion when freezing… When ready to serve, allow to thaw in fridge and serve Will last up to six months in freezer ( I use small to medium size plastic bowls with lids to freeze mine in)
