Amazing Apple-Cherry Pie with Curd Dough! You can experiment with the filling, just like with the dough. It's moderately sweet, with a very pleasant creamy aroma and a crispy, baked crust! There are tons of variations of this dough online. I saw this version of curd dough from @stiganorra Recipe: for a 23-24 cm pan 1 cup = 250 ml volume Filling: ~ 1 kg apples (sweet and sour, crunchy ones like Gala, Semirenko, Granny Smith) 1 tbsp lemon juice 200 g pitted cherries (defrosted, drained) ⅓ cup (75 g) sugar 1-2 tsp cinnamon (to taste) 40 g butter 2 tsp vanilla extract or a packet of vanilla sugar 2 tbsp cornstarch pinch of nutmeg (optional) Dough: 150 g cottage cheese 5-9% ⅓ cup (75 g) sugar 1 packet vanilla sugar pinch of salt 1 large egg (category 1) ¼ cup (60 ml) odorless vegetable oil 1 ⅔ cup (250 g) sifted flour (level) 1 tsp baking powder 1 egg + 1 tbsp milk for greasing the dough Filling: Peel the apples, slice thinly, sprinkle with lemon juice, add the cherries, sugar, cinnamon (vanilla or vanilla sugar), and mix. Melt the butter in a large skillet over medium heat and add the apples. Cover for 2-3 minutes, then reduce the heat to release the juices and soften the apples. Then add the vanilla extract, if using, and stir. Sprinkle the apples with cornstarch. Stir over low heat until the mixture thickens. This should take about 5 minutes. Transfer to a container and cool completely! (You can prepare the filling the day before and store it in the refrigerator, covered.) Dough: cottage cheese, sugar, vanilla sugar, salt, egg, and butter. Blend until smooth. Gradually stir in the flour and baking powder. The amount of flour may vary depending on the fat content and consistency of the cottage cheese. The resulting dough should be very soft and not sticky. Wrap in plastic wrap or a bag and refrigerate for at least 30 minutes to an hour. Roll out into a 5 mm thick layer. Cut out desired diameter. Transfer to a greased pan, press down firmly, and prick the bottom with a fork. Spread the filling. Roll out the remaining dough thinly and cut into strips. Place on top of the filling. Brush with egg and milk, sprinkle with sugar. Place the pie in a preheated oven at 200 degrees Celsius (400 degrees Fahrenheit). After 7-10 minutes, reduce the temperature to 180 degrees Celsius (350 degrees Fahrenheit). The pie will bake for about 50 minutes, but the baking time will vary depending on the pan and oven! If the top browns too early, place a sheet of foil on top and continue baking until done. Cool the finished pie completely!
