Hi guys!! Sofrito is an aromatic green puree made of bell peppers, cilantro, culantro, sweet peppers, garlic and onions. It makes a powerful base for dishes like stews, beans and rice with different variations among the Caribbean, Latin America and other Spanish-speaking countries. There are so many ways to prepare sofrito. Here is my sofrito 101 version, quick and simple. Enjoy, Cheers! Rosangel Ingredients: Culantro, Cilantro, Sweat Peppers, Red, Green, and Yellow Bell Peppers, Garlic, Onions, and Sazon Goya Uses: Sofrito is eaten in as many different ways as there are methods of making it. Since it's usually the first thing to go into a cooking pot, it can be lightly sauteed to bring out the flavors of the aromatics. Sometimes in other recipes, the sofrito isn’t added until the end of the cooking time, and it's also sometimes used as a topping sauce for grilled meats and fish.
