There is no "one-size-fits-all" for capture systems in cockpits. Every avionics stack is different and every pilot manages the cockpit in a different way. The key ingredient is that you develop your work flow, on the ground, before takeoff so that you can concentrate on flying once you are in the air. Recognize the difference between TRRS cables (3 Black Rings on the 3.5mm Jack Plug) and TRS cables (2 Black Rings on the 3.5 mm Jack Plug). The two are not compatible on any level. TRRS is for Mobile Devices and Tablets. TRS is for audio/video recording. Each camera and device will have internal settings to adjust the expected input power. You need to experiment. In this video I found that using the "line-in" selection in the GoPro, along with adjusting the backseat volumes, produced the best audio for my sonic environment. Sometimes mic-level may be a better choice. Test on the ground before turning on the engine. Get your workflow dialed. DO NOT WAIT UNTIL YOU ARE AIRBORNE.
