What Do I Look for? Lessons Preserving Onions

Welcome back, friends! I'm Rachel, and today I'm taking you along as I preserve our onion harvest here at the 1870s Homestead. In this video, I'll walk you through everything from the different varieties we grew — like Red Wing, Walla Walla, and Patterson — to the steps I take to store them for the long term. First, I’ll show you how I prep the onions after curing, trimming the tops and roots and cleaning them up. I’ve got three big crates of onions that will be heading down to our cool basement for storage. I also share some of the common reasons onions might rot and tips to avoid it, such as making sure they cure in a well-ventilated, shaded space. For those of you interested in freezing onions, I’ll explain why vacuum sealing is your best option to keep that strong onion smell from taking over your freezer. I’ll also talk about the different storage conditions needed to keep onions fresh for as long as possible—sometimes all the way until March!
