Canning Peaches 3 Ways: Slices, Jelly & Juice
We canned peach slices, peach jelly, and peach juice all from one big basket of peaches we bought at a neighboring farm. This was a couple of long, sticky days of canning on the homestead. This is our first time doing all three from the same batch, so if you're newer to preserving too, you're in good company. We walk through peeling and slicing for the canned peaches, cooking down the jelly, and of course our resident taste tester wanted to try them all. New here? Canned Peach Slices in Light Syrup Ingredients: 7 pounds ripe yellow peaches 3 cups granulated sugar (for syrup) 5 cups water (for syrup) 1Tbsp lemon juice per jar (optional, to prevent browning) Fill pint jars with peaches, save the extra syrup for peach juice recipe. Process in boiling water bath in pint jars for 25 minutes. 2. Peach Jelly Ingredients: 4 pounds ripe peaches, blended with or without skins 2-3 Tbsp bottled lemon juice 1.8 ounces powdered fruit pectin (1 box) 6 cups granulated sugar In a large, deep saucepot (peach jelly foams a lot), combine the blended peach puree, lemon juice, and fruit pectin. Stir well and bring to a full rolling boil that can't be stirred down. Add sugar and boil hard for one minute. Remove from heat and skim off any foam. Ladle hot jelly into hot jars, leaving 1/4-inch headspace. Process in a boiling water bath for 10 minutes Remove jars and let cool undisturbed for 12-24 hours. Jelly can take up to 48 hours (occasionally longer) to fully set, so don't panic if it looks loose right away. 3. Peach Juice Use the leftover syrup/peach juice from your sliced peaches recipe, or if you don't have that you can combine about 8lbs of pureed peaches with 4 cups of water, 1/2 cup of sugar, and 4 Tbsp of lemon juice.
