Local Style Gandule Rice, Instant Pot or Rice Cooker, Gandule Rice made easy,

Gandule rice or arroz con gandule is a popular Puerto Rican dish we make in Hawaii and add a little Island Flavor to make it better. A Perfect rice flavored with Gandule beans, seasoned pork, Blk Olives, & fresh Veg. A Perfect meal that can be served as a main dish or side dish. Local Style Gandule Rice Recipe Ingredients: 3 cups uncooked white rice (Rinsed tell water is clear) 2 tablespoon achiote oil or Annatto Oil 1 pound bacon (diced) 1 pound pork butt or tenderloin, sliced into thin, short, narrow strips 5 cloves garlic, finely minced 1 green bell pepper, diced 1 onion, diced 1 bunch cilantro, finely chopped 1 bunch green onion, thinly sliced 3 cups chicken broth 3 packets Sazon Goya seasoning 1 can (15 ounces) tomato sauce 1 can (15 ounces) gandules verdes , drained 1 can (4 ounces) pitted sliced black olives, (drained) Directions: 1. Rinse rice in water until water runs clear. Drain and set aside. 2. Set a large pan over High heat. Add Annatto oil, Pork and then bacon. Sauté tell browned, about couple of minutes. (make sure to season well) 3. Next add garlic, bell pepper, and onion. Sauté until the onions become translucent, about 3-4 minutes. 4. Then add Rice, cilantro and green onion, Sazon Goya seasoning, sauté for 2-3 minutes Remove from the heat and place inside your cooker. 5. Add chicken broth, tomato sauce, Gandule beans, and olives. 6. Stir until well combined and everything is submerged. 7. Set the rice cooker to cook. Once the rice cooker has finished, open and fluff the rice with a spatula. *If using an Instant Pot, close lid, set to sealing and cook on the rice setting. This will cook for 12 minutes. Allow 10 minutes natural pressure release. Turn valve to venting. Once the pin has dropped, open and fluff the rice by stirring with a spatula. *This can also be cooked on the stove top or in the oven in a Heavy duty Dutch oven low & slow.
