Servings: 2 | Difficulty: Easy | Cooking time: 18 minutes | Preparation time: 15 minutes INGREDIENTS For the Chickpea and Chicken Bowl: 300g marinated chicken breast medallions 1 can of cooked chickpeas, CAMPO LARGO 80g canned sweetcorn, FRESHONA 1/2 cucumber 8 cherry tomatoes 1/2 avocado 1/2 carrot 40g sprouts 1 tbsp extra virgin olive oil, OLI SONE 1 pinch of fine salt, KANIA 1 pinch of cumin, KANIA 1 pinch of hot paprika, KANIA For the fresh sauce: 1 natural yogurt, MILBONA Juice of 1/2 lemon 1 tbsp extra virgin olive oil, OLI SONE 1 pinch of ground black pepper, KANIA 1 pinch of parsley KANIA PREPARATION: 1. In a bowl, season the chickpeas with cumin, paprika, salt, and pepper. Bake them for 20-25 minutes at 200°C (390°F). 2. Cook the marinated medallions in a hot skillet for 3 minutes per side, until golden brown. Remove and set aside. 3. Mix the yogurt, lemon juice, oil, pepper, and parsley until you have a smooth sauce. 4. Place the chickpeas as the base of the bowl, add the corn, sliced carrots, halved cherry tomatoes, diced cucumber, diced avocado, and sprouts. Arrange the medallions on top and finish with the sauce. ADDITIONAL NUTRITIONAL INFORMATION: Bowls are an increasingly popular option. It's a type of salad, or warm salad, ready to eat anywhere, that we can easily prepare at home. Here's one option. Nutritionally, the chickpeas provide a source of carbohydrates and are also a source of quality protein, along with the protein from the chicken. This makes for a calorie-dense dish, which, when paired with a good serving of vegetables, makes a complete main course. We could increase the calorie density by adding a larger source of carbohydrates, such as rice, quinoa, or couscous. We could also omit the chicken for a vegetarian version, which, if we use plant-based yogurt, would be a vegan version. Additional information about the main ingredient: In this recipe, we can highlight both the chickpeas and the chicken. Both are sources of high-biological-value protein. Chickpeas also provide a source of carbohydrates, as well as fiber. Chicken also provides B vitamins, such as B6 and niacin, along with selenium and phosphorus, among others.
